Mini Egg Nests
How CUTE are these little mini egg nests!? They are so fun to make and just to look at. You can involve your kids when the time comes to fill the nests and they will just love it! Be sure to buy extra mini eggs to allow for snacking while you are making them wink wink. Once they’re done, you can share them in so many ways: give them as gifts, set one on each plate as part of your Easter table setting, or just enjoy them as a family.
They’re gluten-free, grain-free, and can be made dairy-free and sugar-free (minus the mini eggs). I use Lily’s sugar-free chocolate chips but you can use dairy-free, dark, milk or regular chips; whatever you prefer. The nests are a little time consuming to shape and mould but once they’re done they set up in the freezer super quickly; about 5 minutes. Then they’re ready to fill! Have fun with these ones!
Mini Egg Nests
Ingredients
- 2 heaping cups chocolate chips
- 1 tbsp coconut oil
- 4 cups shredded, unsweetened coconut
- 200g mini eggs, for topping
Instructions
- Line two baking sheets with parchment paper and set aside.
- In a small saucepan, melt the chocolate chips and coconut oil over low-medium heat until smooth. Remove from the heat.
- Stir in the coconut until fully coated in chocolate.
- Make mounds of the coconut mixture on the parchment paper and shape into 12 small nests with the back of a spoon. This part can be a bit tricky.
- Freeze the nests for 10-15 minutes.
- Top with mini eggs and enjoy or give as a gift!
