What I love about Green Goddess Soup

This Green Goddess Soup is a great recipe for transitioning to Spring and it’s as fresh as it gets! It’s loaded with all sorts of green vegetables that are FULL of nutrients to help you fulfill your daily quota. It has things like cauliflower which is a cruciferous vegetable known for its cancer-fighting properties. I try to have at least one cruciferous vegetable a day whether it’s kale, cabbage, cauliflower or others from the list. A soup is a great way to consume vegetables! I mean, there’s only so many salads a person can eat! Am I right!?

It’s the blend of these vegetables that makes up the beautiful pale green colour of this soup. Another thing I love about soups is that all you need is just one pot. This means minimal dishes and easy clean up which makes me (a person who detests dishes) a very happy woman! This soup does contain dairy but you can substitute the cream for coconut milk to make it dairy-free if you prefer. It is naturally gluten-free and low carb. You can also serve it as gazpacho in the summer time for a different and even more refreshing take on the soup.


What you will need to make Green Goddess Soup

Here’s a list of ingredients that you will need:

  • Vegetables - The best blend I have found is a combination of cauliflower, broccoli, celery, zucchini and spinach. Try to find organic if possible!

  • Onion - You will need one medium-sized white or yellow onion for this recipe. You could also use 3a4 shallots in place of an onion.

  • Garlic - I love adding garlic to all of my dishes and especially in soups! I always recommend fresh, mixed garlic cloves for the best flavour, but you can use store bought minced garlic as well.

  • Broth - This recipe calls for vegetable broth, but you could use chicken broth in a pinch too.

  • Cream - I love a creamy blended soup which is what this one is! You can use either heavy cream or coconut cream for the “cream” part of the soup.

  • Parmigiana - I like to garnish my soup with a little parmigiana cheese. You can mix it in as well if desired.

You will also need a few pantry basics:

  • Olive oil

  • Sea salt and pepper

Green Goddess Soup

This green soup is delicious and about as healthy as it gets with multiple varieties of green vegetables.

Ingredients

  • 2 small heads broccoli, chopped
  • 1/2 head medium-sized cauliflower, chopped
  • 1 white onion, diced
  • 3 cloves garlic, minced
  • 3 stalks celery, chopped
  • 1 zucchini, chopped
  • 2 cups spinach, packed
  • 3-4 cups vegetable broth
  • 1/2 - 1 cup heavy cream
  • 2 tsp sea salt
  • 1 tsp cracked black pepper
  • shredded Parmesan cheese, for garnishing
  • olive oil, for sautéing

Instructions

  1. Sauté the onion, celery and zucchini until softened. Add the garlic and cook another 30 seconds.
  2. Add the broccoli, cauliflower and vegetable broth. Cover and simmer until the vegetables are cooked and tender, about 15 minutes.
  3. Add the spinach and cover until wilted, about 2 minutes.
  4. With a hand blender, blend the soup until it is smooth and no chunks remain.
  5. Stir in the heavy cream and season with salt and pepper.
  6. Garnish with parmesan cheese, serve hot and enjoy!
