Summer Nectarine Salad
Ok, I’m obsessed! This salad has been my go-to this summer to make for all of our family bbq’s and everyone loves it! Its so fresh and has such simple but good ingredients. I love the sweetness of the nectarines and the little kick from the shallots. Not to mention, the creamy chèvre that absolutely makes it! Garnish it with some fresh basil leaves and you are left with a work of art. I highly recommend you try it out before summer is over. It would make a beautiful addition to your dinner party whether it’s an appetizer or a side.

Summer Nectarine Salad
This nectarine and cucumber salad is so fresh and delicious with the perfect addition of shallots, basil and creamy chèvre.

Ingredients
For the salad:
- *4 cups sliced nectarines
- 2 cups sliced cucumber half-moons
- 1/2 cup creamy crumbled chèvre
- 1/4 cup sliced shallots
- 1/4 cup basil leaves, sliced
For the Vinaigrette:
- 1/3 cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- 2 tbsp white balsamic vinegar
- salt and pepper, to taste
Instructions
- Make the vinaigrette: add all of the ingredients to a small jar, secure the lid and shake to mix well.
- In a medium-sized mixing bowl, add the nectarines, cucumbers and shallots and toss with the vinaigrette.
- Garnish with basil leaves and chèvre and serve. Enjoy!
Notes
*Make sure your nectarines are firm. If they are squishy at all then they will be too hard to slice from the pit.
