Strawberries and Cream Chia Pudding

Chia pudding has become increasingly popular over the past few years and for good reason! It is a satisfying snack that is loaded with healthy fats, fibre and protein. Chia seeds are also high in omega-3’s and antioxidants. It’s a snack that can be easily prepared in advance and taken with you on-the-go! I will often make it ahead for my husband to grab and take to work with him in the morning. He loves it! It’s also low carb, gluten-free and can be made dairy-free.

There are few ingredients which makes for a super quick and easy recipe. There are also no thickeners as the chia seeds act as the main thickener. They absorb all of the liquid and bang, you have pudding! Chia puddings are also very versatile in the sense that you can really customize them to your preference of flavours. It’s a blank canvas; you can add whatever you like. I chose strawberries here but you can use any fruit that your heart desires! The fruit adds a good dimension of freshness to go along with the richness of the chia and cream.

Strawberries and Cream Chia Pudding

Strawberries and Cream Chia Pudding

Smooth and creamy vanilla chia pudding with strawberries that is both satisfying and nutrient-dense!

Ingredients

  • 1/2 cup whole black chia seeds
  • 1/3 cup hemp hearts
  • 1 1/2 cups nut milk, oat milk or milk of choice
  • 3/4 cup organic heavy cream
  • 25 vanilla stevia drops
  • Strawberries, for topping

Instructions

  1. In a small mixing bowl, add all of the ingredients except the strawberries and whisk well until completely combined. Let sit for 5 minutes so that the chia seeds can absorb some of the liquid.
  2. Whisk again to break up any lumps of chia seeds. Cover and refrigerate overnight.
  3. The next morning, divide into small jars and top with fresh, sliced strawberries.
  4. Serve and enjoy!
