Spicy Baked Honey Mustard Chicken Thighs

Need an easy weeknight dinner recipe? Well, I have just the thing for you. These spicy baked honey mustard chicken thighs are so tasty and flavourful that the whole family will love them! Is there someone in the family who is not a fan of spice? No problem, just omit the chilli flakes and substitute the spicy mustard for more dijon. This recipe really is so easy to make. All of the sauce ingredients get whisked in one bowl and then all you have to do is pour it over the chicken thighs and say: “bye-bye” for 40 minutes as it bakes in the oven. All you need are a few basic ingredients to make this yummy dish:

  • Chicken thighs - For this recipe, I use bone-in, skin-on chicken thighs for all of the flavour. The skin on the thighs get super crispy and tasty so don’t opt for skinless. Also a bonus, chicken thighs tend to be cheaper than chicken breast or boneless skinless thighs. Thats a win!

  • Mustard - There are 3 types of mustard used in this recipe: grainy, spicy and dijon. I love the look, texture and flavour of the grainy mustard. The spicy mustard adds a little spice and the dijon mustard adds more flavour.

  • Honey - Adding a little honey not only adds sweetness but it also turns the sauce into a sort of glaze and helps those skins to get a little caramelized on top too.

  • Garlic - Garlic is always a must in my kitchen! Lots and lots of garlic! I always recommend using fresh garlic that you can mince yourself. You can buy the marinated stuff from the store but in my opinion, it doesn’t compare when it comes to flavour. If you’re really in a pinch, you can use garlic powder.

  • Chili flakes - Chili flakes add a little spice to this recipe which I love! If you aren’t a spicy fan then just omit the chili flakes. It won’t compromise any flavour.

  • Fresh parsley - Don’t forget the garnish! A little chopped, fresh parsley adds a hint of colour and flavour to this dish. It finishes off “the look” which is nice if you are serving this dish to friends or family.

Honey + Mustard + Chicken are three ingredients commonly paired together (think chicken tenders with honey mustard) and for good reason! The acidness of the mustard is balanced out with the sweetness of the honey and the chicken acts as the perfect vessel. This recipe can be easily doubled if you have big eaters in the family. If you have leftovers, I recommend reheating them in the oven so that those skins can crisp up again. I just love how quick and easy this dish is to prepare. Really, it’s only about 10 minutes of actual prep and then the rest of the time is spent in the oven cooking. It’s the BEST weeknight meal for those busy evenings.

Ingredients

  • avocado oil spray, for greasing
  • 9 chicken thighs
  • 1/2 cup grainy mustard
  • 1 tbsp spicy mustard
  • 1 tbsp dijon mustard
  • 1/4 cup honey
  • 2 tsp lemon juice
  • 1 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/2 tsp paprika
  • 1 tsp chili flakes
  • 1/2 tsp sea salt
  • 1/4 tsp fresh cracked pepper
  • chopped fresh parsley, for topping

Instructions

  1. Preheat the oven to 400F and spray a 7"x9" baking dish with avocado oil. Set aside.
  2. Pat dry the chicken thighs with paper towel and then add them to the bottom of the baking dish, skin-side up.
  3. In a small bowl, add the mustards, honey, lemon juice, olive oil, garlic, paprika, chilli flakes, salt and pepper and whisk to combine.
  4. Pour the sauce over the chicken thighs and bake uncovered in the preheated oven for 40 minutes.
  5. With the oven door closed, turn off the heat and set the oven to high-broil for 2 minutes.
  6. Remove the chicken thighs from the oven, garnish with chopped, fresh parsley and serve!
