What I love about PB and J Frozen Yogurt Bars

These peanut butter and “jam” frozen yogurt bars are perfection! With all of the ingredients that you would have in your morning granola bowl, you can basically eat this for breakfast. Made with rich and creamy greek yogurt, honey, crushed raspberries and swirls of peanut butter, these yogurt pops are the perfect snack for any time of day. I levelled them up by dipping them in some dark chocolate and it definitely did not disappoint! Both chocolate and peanut butter and chocolate and raspberries are matches made in heaven, so it felt right. All you need is two bowls, some popsicle moulds and a freezer to make these beauties!

These bars really are the perfect frozen treat to have in the freezer for the summer months. These cold treats won’t only cool you down, but they double as a hearty snack! Unlike typical ice pops that are made with just water or juice, these frozen yogurt bars are made with whole milk greek yogurt and creamy peanut butter to bring you a nutritious snack full of healthy fats and protein. Bonus: you only need 6 ingredients to make them!


What you will need to make PB and J Frozen Yogurt Bars

Here is a list of ingredients that you will need:

  • Yogurt - We are using full-fat, plain greek yogurt for this recipe. Using full-fat greek yogurt will make sure that these frozen treats are ultra rich and creamy and it will add protein as well. Make sure you use plain yogurt as we will add honey to sweeten the bars.

  • Honey - Honey and yogurt is one of my favourite combinations. They compliment each other so well! Honey is our main sweetener in these frozen bars. You will need 1/4 cup liquid honey for this recipe.

  • Raspberries - Juicy, fresh raspberries are what make up the “jam” portion of these bars. They are gently crushed and folded into the yogurt until they are beautifully dispersed. Raspberries are my favourite, but you can also use blackberries or strawberries if you like.

  • Peanut butter - I used a natural, creamy peanut butter for this recipe. I’m careful not to fully mix it into the yogurt because it’s those chunks of peanut butter that you later bite into when the bars are frozen that make them so good!

  • Chocolate - Dipping the yogurt bars in chocolate just takes them to the next level! I love dark chocolate for a little contrast to the sweetness, but you can use milk chocolate as well. Melting chocolate, chocolate chunks or chocolate chips all work for this recipe.

  • Coconut oil - You will need a little coconut oil to melt with the chocolate to help it form a nice, thin, crunchy shell around the yogurt bars.

These chocolate-dipped peanut butter and "jam" frozen yogurt bars are so healthy that you could eat them for breakfast! Full of crushed raspberries and ribbons of creamy peanut butter, these frozen bars are simply delicious!

Ingredients

  • 2 cups full-fat plain greek yogurt
  • 1/4 cup honey
  • 1/2 cup creamy peanut butter
  • 1 cup raspberries
  • 1 cup chopped dark chocolate
  • 2 tsp coconut oil
  • flakey sea salt, for garnishing

Instructions

  1. Prepare 8 popsicle moulds and set them aside.
  2. In a medium-sized mixing bowl whisk together the yogurt and honey until combined. Set aside.
  3. Add the raspberries to a small mixing bowl and partly mash them with a whisk. Add them into the bowl with the yogurt along with the peanut butter.
  4. Partly fold in the raspberries and peanut butter so that they are just mixed through, but some chunks still remain.
  5. Spoon the yogurt mixture into the prepared popsicle moulds, place a popsicle stick in each one and freeze for at least 3 hours or overnight.
  6. Line a baking sheet with parchment paper and set aside.
  7. In a small saucepan combine the chocolate and coconut oil and stir constantly over low to medium heat until completely melted.
  8. Remove the frozen yogurt bars from the freezer and dip each one in the melted chocolate.
  9. Place them on the prepared baking sheet, sprinkle with flakey sea salt if desired and return to the freezer for another 20-30 minutes or until the chocolate is set.
  10. Enjoy!
