No-bake Rocky Road Bars

These no-bake rocky road bars are definitely a new favourite of mine! They’re chewy, nutty, sweet and just SO good. They’re the perfect thing to grab for dessert. They’re also super easy to make. All of the ingredients are mixed in one pot and then transferred to a square pan to set up in the fridge. Once chilled, they are easily cut into squares and can (and should be) enjoyed on the spot! The ingredients list is basic, all of which can be found in the pantry:

  • Chocolate - I recommend chopped melting chocolate or chocolate chips for this recipe. You can use whatever type/brand you prefer. I use sugar-free chocolate chips.

  • Peanut butter - The peanut butter adds to the flavour and texture of the rocky road bars. Smooth, natural peanut butter works best for this recipe. You could use crunchy peanut butter if you like, but there are already a lot of nuts in this recipe. It’s your choice!

  • Coconut oil - Adding a little coconut oil to the “wet” ingredients helps to loosen up the chocolate mixture a little so that it is softer when biting into it. You could use butter if you don’t have coconut oil.

  • Nuts - I used a mix of chopped pecans and macadamia nuts for these bars. I love the flavour of these specific nuts and I think they go really well with all of the other ingredients. You could use chopped walnuts or almonds instead if you like.

  • Mini marshmallows - You can’t have a rocky road bars without mini marshmallows! Make sure you pop them in the freezer for about 30 minutes before you start making the bars to help them firm up. This prevents them from melting when they are added to the warm chocolate mixture.

  • Crispy rice cereal - The crispy rice cereal adds yet another element of crunch to these bars. They are the perfect add-in for a rocky road dessert bar.

  • Coconut - I use unsweetened desiccated coconut for sprinkling on top of the bars. You could use sweetened if you prefer, or if you like you could use shredded coconut which is a bit more textured and chewy. I prefer a more subtle addition of coconut.

These rocky road bars are the perfect dessert to make when you’re hosting or attending dinner because they are just so simple to make. They take hardly any time to prepare and while they’re chilling, you can do something else with your time. I kind of picture these being brought to a bonfire party where there is a folding table set up with some snacks on it and all of the s’more fixings. These would be perfect to bring to something like that, but really they would be great for any party or gathering!

No Bake Rocky Road Bars

These crunchy, chewy, chocolatey rocky road bars are one of my favourite sweet treats. They're FULL of yummy things like nuts, mini marshmallows and crispy rice cereal.

Ingredients

  • 2 cups chopped melting chocolate or chocolate chips
  • 1/2 cup smooth, natural peanut butter
  • 2 tbsp coconut oil
  • pinch salt
  • 3/4 cup chopped pecans
  • 1/2 cup chopped macadamia nuts
  • 2 cups mini marshmallows, frozen
  • 3/4 cup crispy rice cereal
  • 1/4 cup desiccated coconut

Instructions

  1. Line an 8"x8" pan with parchment paper and set aside.
  2. In a medium-sized pot, melt the chocolate, peanut butter and coconut oil over low-medium heat until smooth. Stir in a pinch of salt.
  3. Add the chopped pecans and macadamia nuts to the pot and stir to coat them.
  4. Pour in the crispy rice cereal and the frozen marshmallows and fold them in until everything is completely covered in chocolate.
  5. Spread the rocky road mixture into the prepared pan and flatten it with a spatula making sure that all of the corners are filled and the top is level.
  6. Sprinkle the top evenly with desiccated coconut.
  7. Cover the pan and transfer it to the fridge for 1 hour to set up.
  8. Remove the pan from the fridge and cut into 12 squares. Enjoy!
