Green Salad with Berries and Avocado

I love a loaded salad and this is one of them! It has so many scrumptious elements that are full of vitamins and minerals. Blueberries high in antioxidants and strawberries high in vitamin C are paired with bright mixed greens, creamy avocado, slivered almonds (not pictured) and crumbled feta. It’s a sight for sore eyes! You can feel good about eating most salads, but you can feel really good about eating this one. Add some grilled chicken on top and you’ve got a meal! This recipe serves 4 people if it is being served as an entree or 6 people if it is being served as a side.

The dressing is very simple with only 4 ingredients:

  • extra virgin olive oil

  • white balsamic vinegar

  • fresh squeezed lemon juice

  • salt and pepper

It’s not a sweet dressing, so if you prefer a sweet dressing with this type of salad feel free to add the sweetener of your choice. This salad would be so easy to pack for a work lunch; just prepare everything except the avocado in a glass storage container and pack the dressing and avocado to add before you eat. You could even prepare it the day before. Of course it would also be such fun thing to serve guests if you are hosting a summer dinner party. These beautiful colours adorning your table would be like a centre piece in itself.

Green Salad with Berries and Avocado

This is a beautiful, seasonal summer salad with fresh berries, creamy avocado and salty feta cheese.

Ingredients

For the salad:
  • 8 cups mixed greens
  • 1 1/3 cup sliced organic strawberries
  • 1 1/3 cup organic blueberries
  • 1 cup slivered almonds
  • 1 cup crumbled feta
  • 2 ripe avocados
  • *optional - 1/2 cup thinly sliced shallots
  • fresh cracked pepper
For the Lemon Vinaigrette:
  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh squeezed lemon juice
  • 1/4 cup white balsamic vinegar
  • salt and pepper to taste

Instructions

  1. To make the vinaigrette, add all of the ingredients to a jar, secure the lid and shake well until blended. Set aside.
  2. Add the mixed greens to a large bowl and toss with the vinaigrette until all of the leaves are coated. Divide into 4 salad bowls.
  3. Top the salads with strawberries, blueberries, slivered almonds, feta and shallots if you are using them.
  4. Cut the avocados in half and remove the pits. Scoop out the flesh of the avocado and discard the skin. Lay the avocado flat side down on a cutting board and thinly slice it lengthwise. Fan each half out and place it on top of each salad.
  5. Garnish the salads with fresh cracked pepper and serve!
