Grain-free Chocolate Granola
It’s ok to have chocolate for breakfast, right? Well, if you have it in the form of this chocolate granola I'd have to say it’s absolutely ok! This granola is loaded with nuts and seeds and provides a rich dose of vitamins and minerals with each portion. The types of nuts and seeds that are used are absolutely customizable, so swap them out for your favourites!
This granola is grain-free meaning that there are no oats, quinoa or other grains, so it is both keto and paleo. You can certainly add oats if you prefer to have them and use less nuts and seeds.
You can serve the granola on yogurt, with milk or even on top of a smoothie bowl. It’s fun to try it in different ways. Here’s a fun tip: when you have it with milk, after a while your milk turns into chocolate milk! So, then you have chocolate granola with chocolate milk. Is that too much chocolate? Asked no-one ever. So, where are my chocolate lovers at because you all have to try this!
Grain-free Chocolate Granola
Ingredients
- 1 cup almonds, chopped
- 1 cup walnuts, chopped
- 1 cup pumpkin seeds
- 1 cup shredded coconut
- 2 tbsp chia seeds
- 2 tbsp hemp seeds
- ¾ cup cocoa powder
- 2 tbsp granulated sugar
- 1 tsp salt
- ¼ cup coconut oil
- ½ cup honey, maple syrup, or sugar-free syrup
- 1 tsp vanilla
- *optional* bananas and shredded coconut for topping
Instructions
- Preheat your oven to 300F and line a baking sheet with parchment paper.
- In a medium-sized mixing bowl, add all of the ingredients except the coconut oil, honey and vanilla and mix until combined.
- Heat the coconut oil and honey on the stovetop, stirring until combined. Once combined, add in the vanilla. Add the wet mixture to the granola mixture and mix until combined.
- Spread the granola on the prepared baking sheet and bake for 25 minutes, stirring halfway through.
- Let cool on the rack completely before breaking up into pieces.
- Eat over yogurt or with milk. Add sliced bananas and coconut, if desired. Enjoy!
