GF Oatmeal Whoopie Pies
These gluten-free oatmeal whoopie pies were such a hit on my social, so I decided to share the recipe here! They’re soft and chewy and made from a perfect gluten-free cookie dough using almond flour and oats. They’re super easy and fun to make. They are loved by kids and adults alike! They’re totally gluten-free and can be made with alternate sweeteners (see note below) for a healthier cookie.
The frosting is simple and you only need 5 simple ingredients:
Cream cheese - You will need 1/4 cup of cream cheese for the frosting.
Unsalted butter - Make sure you use unsalted butter for this. You can always add salt but can’t take it away!
Powdered sugar - Powdered sugar can be measured to your heart’s content. I personally don’t love things overly sweet, so just taste and adjust it to how you like!
Pure vanilla extract - Pure vanilla extract over artificial vanilla extract is always recommended :)
Salt - You only need a tiny pinch of salt for enhancing flavour.
Everything is beat in one bowl using a hand mixer until it’s smooth and fluffy. It’s probably too small of volume to use a stand-mixer, but it could work! Be sure to slather a generous amount onto your cooled cookies for the most tasty, filled cookie sandwiches. You can play around with the frosting too; maybe add a little maple extract or cocoa powder for a chocolate filling. Have fun with it!
Here’s what you will need for the cookies:
Butter - Unsalted butter is always recommended for baking as we have more control over how much salt we add to enhance flavour.
Sugars - I love to use sugar-free sweeteners that are 1:1 to real sugar. You can do this or use straight up regular sugar.
Vanilla - Pure vanilla extract has more real flavour than artificial vanilla extract because it’s real! Artificial extracts often have artificial flavours which are not recommended for health reasons.
Egg - You only need 1 egg for this recipe.
Almond flour - My favourite gluten-free flour! I don’t recommend substituting for other gluten-free flours as the consistencies could vary.
Baking soda - Always a must when baking cookies to help them spread into beautiful, flatten rounds.
Cinnamon - I love the combination of cinnamon and oats, so I had to add a little here. It’s so delicious!
Salt - We will add a little salt to enhance flavour rather than using salted butter.
Oats - You can use rolled, old-fashioned or large-flake oats for these cookies.
GF Oatmeal Whoopie Pies
Ingredients
- 1/2 cup unsalted butter, at room temperature
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 tsp vanilla
- 1 egg
- 1/2 tsp sea salt
- 1/2 tsp cinnamon
- 1/2 tsp baking soda
- 1 1/2 cup superfine almond flour
- 1 1/3 cup rolled oats
- 1/4 cup cream cheese, at room temperature
- 1/4 unsalted butter, at room temperature
- 1 tsp pure vanilla extract
- 1 cup powdered sugar
- pinch salt
Instructions
- Preheat the oven to 350F and line a baking sheet with parchment paper.
- In a medium-sized mixing bowl, beat the butter, sugars and vanilla until smooth.
- Add the egg and mix again.
- Add the salt, cinnamon, baking powder and almond flour and mix until combined. Fold in the rolled oats.
- With a small cookie scoop, drop the dough onto the baking sheet leaving about 2 inches in between. Flatten them slightly before transferring to the oven.
- Bake in the preheated oven for 10 minutes or until just starting to brown on the edges.
- Let the cookies cool completely before frosting.
- In a medium-sized bowl, add the cream cheese and butter and beat with a hand mixer until smooth.
- Add the vanilla and powdered sugar and beat again until combined.
- Add a generous amount of frosting to the bottoms of half of the cookies and add another cookie on top, pressing each one down to form a "sandwich."
