What I love about GF Chocolate Cookie Butter Cups

Well, it’s not unknown that I like a little sweet after dinner every night and these little morsels are the perfect thing! They’re chocolate cups filled with homemade cookie butter. Now, what the heck is cookie butter? It’s basically like a homemade cookie dough made with nut butter and it’s delicious! The key ingredient — cashew butter.

These little Chocolate Cookie Butter Cups are gluten-free, grain-free and peanut-free! They’re super easy to make and one batch makes 14 GF Chocolate Cookie Butter Cups, so you’re set up for the whole week! Well, they may or may not last you the whole week… you may have to hide them from the rest of the family. Correction, you WILL have to hide them from the rest of your family!

What you will need to make GF Chocolate Cookie Butter Cups

Here’s a list of ingredients that you will need:

  • Chocolate - I usually prefer dark chocolate because I like the bitterness in contrast with the sweetness. I also find you can taste the actual flavour of the chocolate more when there’s a higher percentage of cacao to milk/sugar. I use a 70% dark chocolate bar and chop it up to melt. You can also use chocolate chips.

  • Coconut oil - You will need about 1 tsp of coconut oil to melt with the chocolate.

  • Cashew butter - Cashew butter is the best nut butter to make cookie butter! The distinct flavour works so well with the maple syrup and vanilla. Most grocery stores carry this but if you can’t find it and are feeling ambitious and also have a food processor, you can also make it yourself! Just search: “how to make homemade cashew butter” on Google.

  • Maple syrup - I wanted to keep this recipe as free of refined sugar as possible, so we are using maple syrup to sweeten our cookie butter. I always recommend real maple syrup, which we are blessed to have an abundance of here in Canada!

  • Almond flour - As always we are using almond flour for the cookie butter. It’s naturally gluten-free, grain-free and low-carb, which I love!

You will also need a few pantry basics:

  • Pure vanilla extract

  • Sea salt

Ingredients

  • 1 cup chopped dark chocolate
  • 1 tsp coconut oil
  • 1/2 cup cashew butter
  • 1 tbsp maple syrup
  • 3 tbsp almond flour
  • 1/2 tsp vanilla extract
  • pinch sea salt
  • *optional* 1 tbsp grated dark chocolate

Instructions

  1. Prepare a mini muffin tin with 14 mini liners.
  2. Melt the chocolate and coconut oil in a double boiler or in the microwave in 40 second increments, stirring in between.
  3. Pour about 1-2 tsp of melted chocolate into the bottoms of the 14 mini liners and brush the chocolate up the sides with the back of a spoon to create the "walls" of the chocolate cups. Refrigerate for 7 minutes.
  4. Make the cookie butter. In a small bowl, add the cashew butter, maple syrup, almond flour, vanilla extract, salt and grated dark chocolate (if using) and mix well until combined.
  5. When the bottoms of the chocolate cups have hardened, remove them from the fridge and add 1 heaping tsp of cookie butter into each liner, pressing down to flatten.
  6. Pour the remaining melted chocolate over the cookie butter until the tops are level and the cookie butter is completely covered. Return to the fridge for another 10 minutes.
  7. Enjoy!
