Creamy Cucumber Dill Salad

This is one of my absolute favourite salads! It is good all year round, but especially during the hot summer months when you crave something fresh and cool. My mom was adopted into a German family and that is how I came to know about this salad. Many times when we would visit my grandparents, there would be a bowl of this salad on the dinner table. Soon, my mom took on making the recipe and now here I am. I’m excited to share my version of it with you all!

This cucumber salad is so fresh and so easy to make using only 6 ingredients. The main ingredient being cucumber of course and the base of the dressing is sour cream. The fresh dill absolutely makes it! I highly recommend using fresh dill. Do NOT use dried dill; it just won’t have the same effect. The dill brings such a beautiful flavour to the salad and it really is the main distinctive ingredient. This salad is such a yummy thing to bring to your backyard bbq, potluck or summer dinner party. It is cold, fresh, crisp and crunchy and will not disappoint!

Creamy Cucumber Dill Salad

Creamy cucumber salad with fresh dill and shallots is the ultimate summer salad!

Ingredients

For the salad:
  • 5 cups cucumbers sliced into half moons
  • 1/4 cup thinly sliced shallots
For the dressing:
  • 1/2 cup full-fat sour cream
  • 1/2 cup dill fronds, finely chopped
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • salt and pepper, to taste

Instructions

  1. In a medium-sized mixing bowl, add the cucumbers and shallots and set aside.
  2. In a small bowl, add the sour cream, chopped dill fronds, olive oil, lemon juice and salt and pepper and whisk until fully combined.
  3. Add the dressing to the cucumbers and shallots and mix until all of the cucumbers are coated in the dressing.
  4. Top with a garnish of dill and serve!
