Classic French Toast with Berries
French Toast and PJ’s on a Saturday morning sounds pretty much perfect to me. Don’t forget the coffee! Our Saturday mornings are extremely laid back. I’m usually up around 9am and have to wake hubby up at 10 or else he’d sleep the day away. We will lounge and likely eat around noon. By the time we get our day on it is half over! We wouldn’t have it any other way. French toast is a quick, easy and fun brunch that I can whip up for the two of us.
I have been on a french toast craze lately. I kind of forgot about it for a few years. I love to pair it with the classic toppings; berries, whipped cream and syrup. I make my own sugar-free whipped cream and use a sugar-free syrup as well. You can make these whichever way you prefer. The types of toppings are endless! You can also use whatever bread you prefer whether it’s gluten-free, low carb or just plain old regular bread. I typically use a low-carb bread for this recipe. I also found that French toast reheats like a dream! So, if there are leftovers you could even have it during the week.
Classic French Toast with Berries
Ingredients
- 6 eggs
- 2 egg yolks
- 1/2 cup nut milk
- 1 cup heavy cream
- 1 tbsp maple syrup
- 2 tsp pure vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp sea salt
- 12 slices of bread
- butter, for frying
- 1 1/2 cup sliced organic strawberries
- 1 1/2 cup organic blueberries
- 1 1/2 cup organic blackberries
- whipped cream, for serving
- maple syrup, for serving
Instructions
- In a shallow bowl, add the eggs, milk, cream, maple syrup, vanilla, cinnamon and salt and whisk until completely combined.
- Heat butter in a nonstick pan on medium-high heat.
- Add one slice of bread to the egg mixture and let soak for 30 seconds. Flip over and let the other side soak for an additional 30 seconds.
- Add to the hot pan and fry for 1-2 minutes on each side. Repeat with the rest of the slices of bread.
- Add the french toast to a plate, top with berries, whipped cream and maple syrup and enjoy!
