What I love about Classic Avocado Toast for One

Another Saturday morning has rolled around and I’m ready for it! It’s a day to relax, refresh, get things done and put a little extra effort into breakfast then on the usual rushed weekday. On the weekends I like to switch it up with something a little different; usually incorporating eggs in some way to check that protein box. This avocado toast is a fun, delicious and nutritious way to have eggs on a Saturday morning.

If you’re anything like me, it doesn’t take much to turn me off to eggs, so I try to change up the way that I prepare them on a regular basis. Thankfully, there are so many different ways to prepare them! Avocado toast has to be one of my favourite ways to eat eggs from the crisp, toasted bread to the creamy avocado and runny egg yolk. It’s the perfect combination of textures and flavours. Plus, a little sprinkle of “everything but the bagel” seasoning goes a long way.


What you will need to make Classic Avocado Toast for One

Here’s a list of ingredients that you will need:

  • Avocado - Obviously you will want the perfect, ripe avocado to make the best avocado toast! A good, ripe avocado should be firm but have a little give when squeezed. Not too hard and not too soft.

  • Garlic - Fresh garlic packs a punch of flavour and zing which is why I like it, but if you’re sensitive to raw garlic, you can use a sprinkle of garlic powder instead.

  • Spices - You will need dried red pepper flakes, salt, black pepper and of course, everything but the bagel seasoning.

  • Gf Bread - You can use your favourite gluten-free bread for this or if you’re not gluten-free then I would definitely recommend crispy sourdough bread! Yum.

  • Eggs - Organic, free-range/farm-raised eggs are definitely going to have the best flavour and the most nutrients. Not to mention that beautiful orange yolk. If your egg yolk is yellow and not that rich orange colour it is likely that your eggs have been conventionally produced and are absent of many vital nutrients that we want in eggs.

  • White vinegar - You will need about 1 tbsp of white vinegar to make the poached eggs. This helps the egg white to wrap around itself when cooking, creating that beautifully round poached egg.

Classic Avocado Toast for One

Creamy avocado on crisp, toasted bread with the perfect poached egg.

Ingredients

  • 1/2 ripe avocado
  • 1/2 clove garlic, minced
  • 1/2 tsp chili flakes
  • Salt and pepper, to taste
  • 1 slice of gluten-free or sourdough bread
  • 1 free-run egg
  • 1 tbsp white vinegar
  • Everything bagel seasoning, for garnishing

Instructions

  1. Cut the avocado in half and remove the pit. Spoon out one entire half and slice lengthwise into thin slices. Store the other half in the fridge.
  2. Toast and butter the bread. Rub the half clove of garlic all over the toast and then top with the sliced avocado, fanning it out as you lay it on the bread.
  3. Sprinkle chilli flakes, salt and pepper on top of the avocado toast. Set aside.
  4. Next, poach the egg. Bring a small pot of water (about half full) to a boil. Once boiling, add 1 tbsp white vinegar.
  5. Crack the egg into a small bowl. Whisk the boiling water in a circular motion and gently drop your egg out of the bowl and into the centre of the swirl. Turn the boil down to a simmer and let cook for 4 minutes or until your desired doneness.
  6. Remove the egg with a slotted spoon and transfer to a paper towel-lined plate to rest. Season with salt and pepper.
  7. Add the egg on top of the avocado toast and sprinkle all over with Everything Bagel seasoning.
  8. Break the yolk and enjoy!
