Baked Black Bean Burgers

These black bean burgers have been a fav for years and they’ve recently had a makeover, so I’m finally sharing the recipe! They are the perfect dinner recipe for meatless Mondays or even for those days that you forget to take meat out of the freezer. You don’t need much to make them too, just bowl, fork, sheet pan and a few ingredients. They come together in about 20 minutes and are just as good reheated the next day! Pair them with a crisp salad or some air-fryer sweet potato fries and you’re golden.

When it comes to burgers, you’ve got to have toppings and sauces! You can really do whatever you like when it comes to burger toppings, but I have found a few that, combined, make these burgers out of this world! First, real mayonnaise is always the “sauce” of choice for my burgers. It’s just delicious. I also love to add fresh avocado, pickled red onions and a little lettuce. This is ALL YOU NEED. Seriously, these 4 toppings are just perfect. The pickled red onions really make it though. You can make your own by simply adding sliced red onions to a jar and covering them with apple cider vinegar. Let them sit in the fridge overnight.

Baked Black Bean Burgers

These are the best black bean burgers for meatless Mondays! Topped with my favourite (and the only) 4 toppings you will ever need.

Ingredients

For the burgers:
  • 1 (398ml) cans black beans, drained and rinsed
  • 1/3 cup white onion, finely chopped
  • 1/2 cup shredded mozzarella cheese
  • 1 garlic clove, minced
  • 1 egg
  • 3/4 cup almond flour
  • 2 tbsp fresh chopped parsley
  • 1 tbsp mustard
  • 1 tsp chili powder
  • 1 tsp sea salt
  • 1/4 tsp ground black pepper
For the toppings:
  • 5 gluten-free burger buns
  • real mayonnaise
  • sliced avocado
  • lettuce or spring mix
  • homemade pickled red onions (see blog post on how-to)

Instructions

  1. Preheat the oven to 375F and line a baking sheet with parchment paper.
  2. In a shallow bowl, mash the beans with a fork until they are about 70-80% mashed. Add them to a medium-sized mixing bowl.
  3. To the mixing bowl with the beans, add the onion, mozzarella, garlic, egg, almond flour, parsley, mustard, chilli powder, salt and pepper.
  4. Mix the bean mixture with your hands and form 5 patties, placing them on the prepared baking sheet.
  5. Spray them with a little cooking oil and then bake in the preheated oven for 15-18 minutes or until a little crispy on the outside.
  6. Plate the burgers with a bun or without, top with mayonnaise, avocado, lettuce and pickled red onions and enjoy!
