6-Ingredient Butterscotch Marshmallow Bars

With Fall recently approaching, I’m thinking of fall flavours like pumpkin, cinnamon, maple and butterscotch! These Butterscotch Marshmallow Bars are so fun, so easy to make and so yummy! I brought them to our church connect group the other night and everybody loved them! They are incredibly easy to make and you only need a few ingredients. They are the perfect dessert to bring to share at any party, dinner or event with a crowd of people. One batch makes 12 squares and the recipe can easily be doubled (using a 9”x13” pan) for 24 squares. Drizzle a little chocolate on top, maybe sprinkle some flakey sea salt and they’re ready to serve!

I actually remember having a version of these as a kid. There always seemed to be a plate of them on the dessert table at every gathering; you know the ones with multicoloured marshmallows? I’m so excited to have my own version here on the blog now. I hope you love these easy, delicious dessert bars as much as I do! Also, they would last forever in the fridge and freezer (not that I’ve tested it because they don’t last that long in our house).

6-Ingredient Butterscotch Marshmallow Bars

What you will need:

  • Butterscotch chips - You can find these in the baking aisle at most grocery stores. I love to use sugar-free butterscotch chips so that I can enjoy these with a little less guilt, but any brand works great.

  • Peanut butter - Who knew that peanut butter and butterscotch worked so well together? I recommend using an all natural peanut butter with no added sugar. These bars are sweet enough; you don’t need it!

  • Coconut oil - Adding a little coconut oil helps the mixture to comes together into a smooth delicious combination. It keeps them moist and not too dry.

  • Vanilla - Vanilla is always a must when dessert-making!

  • Marhsmallows - You want to get mini marshmallows for this recipe. They are the perfect size an easy to work with. Try to find a brand with all-natural ingredients and no corn products.

  • Melting Chocolate - The melting chocolate is for on top of the bars. You can use a chopped chocolate bar or chocolate chips for this. I recommend dark chocolate; it’s a really nice contrast to the sweetness of the bars.

6-Ingredient Butterscotch Marshmallow Bars

These butterscotch marshmallow bars with peanut butter and chocolate drizzle are the perfect dessert to bring to any party!

Ingredients

  • 1 1/2 cups butterscotch chips
  • 1 cup smooth peanut butter
  • 2 tbsp + 1 tsp coconut oil
  • 1 tsp vanilla
  • 2 1/2 cups mini marshmallows
  • 1/2 cup melting chocolate

Instructions

  1. Put the marshmallows in the freezer while you make the base for the bars.
  2. Line an 8"x8" square pan with parchment paper and set aside.
  3. In a small glass bowl melt the butterscotch chips in the microwave in 30 second increments until smooth and no chunks remain.
  4. In a small saucepan add the peanut butter and 2 tbsp coconut oil and stir over low-medium heat until more viscous and combined. Stir in the melted butterscotch and vanilla and mix until combined.
  5. Let the mixture cool slightly before adding the marshmallows.
  6. Add the marshmallows and then press the mixture into the prepared pan making sure that it is evenly dispersed.
  7. Make the chocolate drizzle: add the chocolate chips and 1 tsp coconut oil to a small glass bowl and microwave in 30 second increments until smooth and no chunks remain.
  8. Drizzle the chocolate all over the butterscotch bars and then refrigerate for at least an hour before cutting into squares.
  9. Enjoy!
