5-Minute Fruit and Nut Muesli

Muesli is one of my all-time favourite breakfast recipes. Think of it as like raw granola… the base is oats and then you can add whatever nuts, seeds or fruit to it that you like, but it is not baked. Back in the day when I used to buy the boxed version, there was one type that I just loved; it was so good! I’ve tried to recreate something similar here with this recipe. It’s full of oats, nuts and freeze-dried and dried fruits. It’s gluten-free, dairy-free, vegan and egg-free. The ingredients are few and generally simple:

  • Oats - Rolled or old-fashioned oats work best for this recipe as they have a larger flake and don’t absorb liquid as fast as quick oats would. I prefer sprouted oats as they are better for digestion.

  • Almonds - I used sliced almonds for this recipe because they are nice and thin but still add a little crunch and texture. Make sure you use sliced almonds and not slivered almonds. If you wanted to use chopped whole almonds, that would work too.

  • Brazil nuts - Brazil nuts are high in many nutrients and they also have a more mild flavour. Chop them finely and they will add a really nice crunch to the muesli.

  • Pecans - I love to combination of almonds, brazil nuts and pecans in this recipe. They all go to well together. Then pecans add another dimension of flavour as well as texture and colour. I used raw pecans.

  • Raisins - The raisins are one of my favourite parts because they add a little bit of sweetness and chewiness to the mixture. You can use any kind of raisins for this recipe. I used black raisins.

  • Freeze-dried fruit - The freeze-dried fruit is what makes this muesli! It’s my favourite part. Not only do they add beautiful colours to the mix, they also have all of the benefits of fresh fruits but are shelf stable! I used freeze-dried black currants and strawberries. Not every grocery store carries them but you can buy them online.

  • Brown sugar - I like to add a little brown sugar to sweeten it up a bit. Brown sugar and oats are just meant to be together! I typically go for a sugar-free brown “sugar” but regular brown sugar works great. You could also try coconut sugar.

  • Salt - A pinch of salt goes a long way. It’s always important to add a little salt especially when you’re using a sweetener like brown sugar. It helps to balance it out and bring out the flavours. I usually use sea salt or pink himalayan salt.

This muesli is a really quick and easy thing to make ahead of time as part of your meal prep for the week. I store everything in a large jar with a lid and keep it in the pantry. It makes busy mornings so much easier because now all you have to do is sprinkle it in a bowl and top with milk. My favourite nut milk to pair it with is macadamia milk. Yum. Also, the freeze-dried strawberries are SO good! I just eat them right out of the bag. I’m surprised they made it into the muesli!

5-minute Fruit and Nut Muesli

This fruit and nut muesli is the best and easiest thing to meal prep for the week! Its hearty, healthy and a pantry staple!

Ingredients

  • 2 cups rolled or old-fashioned oats
  • 3/4 cup sliced almonds
  • 1/3 cup brazil nuts, chopped
  • 1/3 cups pecans, chopped
  • 1/4 cup raisins
  • 1/3 cup freeze-dried black currants
  • 1/3 cup freeze-dried strawberries
  • 1/2 cup brown sugar
  • pinch salt

Instructions

  1. In a medium-sized mixing bowl, add the oats, almonds, brazil nuts, pecans, raisins, freeze-dried black currants and strawberries, brown sugar and salt.
  2. Mix together with a spoon or fork until all of the ingredients are combined.
  3. Transfer the muesli to a large jar and secure the lid.
  4. Store the muesli in the pantry for up to 4 weeks.
  5. Enjoy with your favourite milk!
