These delicious gluten-free Baked Black Bean Burgers have been a long-time favourite, and now that theyโ€™ve had a recent makeover, Iโ€™m finally sharing the updated recipe! Whether youโ€™re planning for Meatless Monday or simply forgot to thaw meat for dinner, these burgers are the perfect solution. Even better, you donโ€™t need much to make themโ€”just a bowl, a fork, a sheet pan, and a handful of simple ingredients. In just about 20 minutes, they come together effortlessly, and best of all, they reheat beautifully the next day.

To complete the meal, try pairing them with a crisp salad or a batch of air-fryer sweet potato fries. With such a combo, youโ€™re guaranteed a satisfying, wholesome dinner. Of course, when it comes to burgers, toppings and sauces are a must!

While you can get creative and use whatever you like, Iโ€™ve discovered a few go-to favourite toppings that take these burgers to the next level. To start, I always reach for real mayonnaiseโ€”itโ€™s my go-to sauce for a reason: itโ€™s just delicious. Next, I layer on fresh avocado, pickled red onions, and a bit of crisp lettuce. Together, these four toppings create the perfect bite. In particular, the pickled red onions really steal the show.

If youโ€™d like to make your own, itโ€™s super easy: simply add thinly sliced red onions to a jar and cover them with apple cider vinegar. Then, let them sit in the fridge overnight to develop that tangy flavour. By the next day, youโ€™ll have the perfect topping to elevate your burgers.


What you will need to make GF Baked Black Bean Burgers

Here’s a list of ingredients that you will need:

  • Black beans – To start, make sure you drain and rinse your black beans really well before making the burgers. Try to find organic, or at least BPA free, canned black beans, if possible.
  • Onions – For this recipe, you can use white onion, yellow onion or even shallots for the burger patties.
  • Mozzarella cheese – Obviously, mozzarella cheese adds delicious cheesy flavour, yum! Gotta have it!
  • Garlic – Additionally, I always recommend using fresh garlic when possible for the best flavour!
  • Egg – You will need 1 medium-sized egg for these burgers.
  • Almond flour – Plus, a little almond flour is needed to bind everything together, but don’t worry – it doesn’t dry them out.
  • Fresh parsley – I love adding fresh herbs wherever possible and a little fresh parsley in these burger patties is just delicious!
  • Yellow mustard – Finally, adding a hint of yellow mustard into the burger mixture gives it a uniquely delicious flavour!

Ingredients
  

For the black bean burgers:

  • 2 398ml cans black beans (drained and rinsed)
  • 1/3 cup white onion (finely chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1 clove garlic (minced)
  • 1 egg
  • 3/4 cup almond flour
  • 2 tbsp fresh chopped parsley
  • 1 tbsp yellow mustard
  • 1 tsp chilli powder
  • 1 tsp sea salt
  • 1/4 tsp black pepper

For the toppings:

  • 5 gluten-free burger buns
  • avocado mayonnaise
  • ripe avocados (sliced)
  • fresh organic leaf lettuce
  • pickled onions (how-to in blog post)

Instructions
 

  • Preheat the oven to 375F and line a baking sheet with parchment paper.
  • In a shallow bowl, mash the beans with a fork until they are about 70-80% mashed. Add them to a medium-sized mixing bowl.
  • To the mixing bowl with the beans, add the onion, mozzarella, garlic, egg, almond flour, parsley, mustard, chilli powder, salt and pepper.
  • Mix the bean mixture with your hands and form 5 patties, placing them on the prepared baking sheet.
  • Spray them with a little cooking oil and then bake in the preheated oven for 15-18 minutes or until a little crispy on the outside.
  • Plate the burgers with a bun or without, top with mayonnaise, avocado, lettuce and pickled red onions and enjoy!
