What I love about 6-Ingredient Butterscotch Marshmallow Bars
Now that fall has officially arrived, Iโve been craving all the cozy treatsโespecially these 6-Ingredient Butterscotch Marshmallow Bars! For starters. theyโre incredibly fun to make, super easy, and seriously delicious. Just the other night, I brought a batch to our church connect group. Everyone couldnโt stop raving about them!
Even better, the recipe is wonderfully simple. You only need a few basic ingredients, and the bars come together in no time at all. They are perfect for last-minute gatherings or casual get-togethers. They are really great anytime youโre in the mood for something sweet and nostalgic.
Speaking of nostalgia, I actually remember eating a version of these bars when I was a kid. There was always a tray of them at every holiday or potluck. I especially remember the ones with colourful marshmallows on the dessert table. For that reason, Iโm especially excited to share my own version here on the blog.
Moreover, the recipe is quick and easy. They’re the perfect treat to bring to parties, potlucks, or fall events of any kind. One batch yields 12 generous squares. However, if you’re serving a crowd, you can double the recipe. Simply, bake the doubled recipe in a 9×13โ pan to make 24 squares. And for an extra-special touch, consider drizzling some melted chocolate on top or adding a sprinkle of flaky sea salt.
Finally, these bars keep well in the fridge or freezer for weeks. That said, theyโve never lasted that long in our houseโeveryone devours them too quickly!
What you will need to make 6-Ingredient Butterscotch Marshmallow Bars
Here’s a list of ingredients that you will need:
- Butterscotch chips – For starters, you can find these butterscotch chips in the baking aisle at most grocery stores. I love to use sugar-free butterscotch chips. This way, I can enjoy these all the more! However, any brand works great.
- Peanut butter – Moreover, who knew that peanut butter and butterscotch worked so well together? I recommend using an all natural peanut butter with no added sugar. These bars are sweet enough; you donโt need it!
- Coconut oil – Also, adding a little coconut oil helps the mixture to comes together into a smooth delicious combination. It keeps them moist and not too dry.
- Marshmallows – Furthermore, you want to get mini marshmallows for this recipe. They are the perfect size an easy to work with. Try to find a brand with all-natural ingredients and no corn products.
- Melting Chocolate – Finally, the melting chocolate is for on top of the bars. You can use a chopped chocolate bar or chocolate chips for this. I recommend dark chocolate; itโs a really nice contrast to the sweetness of the bars.


6-Ingredient Butterscotch Marshmallow Bars
Equipment
- 1 8" x 8" Square Pan
Ingredients
- 1 1/2 cups butterscotch chips
- 1 cup smooth, natural peanut butter
- 2 tbsp + 1 tsp coconut oil
- 1 tsp pure vanilla extract
- 2 1/2 cups mini marshmallows
- 1/2 cup chopped dark chocolate
Instructions
- Put the marshmallows in the freezer while you make the base for the bars.
- Line an 8"x 8" square pan with parchment paper and set aside.
- In a small glass bowl melt the butterscotch chips in the microwave in 30 second increments until smooth and no chunks remain.
- In a small saucepan add the peanut butter and 2 tbsp coconut oil and stir over low-medium heat until more viscous and combined. Stir in the melted butterscotch and vanilla and mix until combined.
- Let the mixture cool slightly before adding the marshmallows.
- Add the marshmallows and then press the mixture into the prepared pan making sure that it is evenly dispersed.
- Make the chocolate drizzle: add the chocolate chips and 1 tsp coconut oil to a small glass bowl and microwave in 30 second increments until smooth.
- Drizzle the chocolate all over the butterscotch bars and then refrigerate for at least 1 hour before cutting into squares.
- Cut into either 9 or 12 squares and enjoy! Store in the fridge.
